Aramark Collegiate Hospitality, in partnership with Jacksonville University, proudly announced the grand opening of the newly renovated Riverview Dining Hall, a key milestone in a multi-year strategic plan to elevate campus dining experiences. The ribbon cutting ceremony, held on the campus of Jacksonville University, celebrated the completion of the extensive renovation and the continued collaboration between Aramark’s Dolphin Culinary Group and the university.
The event featured remarks from university leadership, including Jacksonville University Senior Vice President of Student Affairs and Dean of Students, Dr. Kristie Gover, alongside representatives from the Hearts4Minds Foundation and the Dolphin Culinary Group. Jacksonville University President Tim Cost was among the leadership group that cut the ribbon during a ceremony that highlighted the transformative impact of the renovation on student life and well-being.
“Dining on campus is so much more than a meal. It’s a chance for students, faculty, and staff to build community, form friendships, and feel a sense of belonging,” said Dr. Kristie Gover, Jacksonville University Senior Vice President of Student Affairs and Dean of Students. “We’re grateful to our partners at Dolphin Culinary Group for creating a space where connections grow and the heart of campus truly comes alive.”
Renovation Highlights
● A complete remodel of all front-of-house and customer-facing areas
● An expanded craft coffee bar featuring Haymaker Coffee (local roaster & JU alum)
● A vibrant new mural created in partnership with the Hearts4Minds Foundation, promoting mental health awareness
● The introduction of the Ozzi reusable to-go box system, supporting campus sustainability goals
● A relocated private dining room offering scenic views of the river and baseball stadium
● An enhanced ambiance with curated music via Rockbot
● The rebranding of the vegan station to “Root,” emphasizing plant-forward dining
● An upgraded self-serve smoothie station
● New culinary stations, including Naked Food Station featuring allergen-friendly options and Green Skillet featuring made-to-order vegan sauté dishes
The Riverview Dining Hall renovation marks the latest achievement in a phased transformation of Jacksonville University’s dining landscape by Aramark Collegiate Hospitality that began in 2023. Beginning in Fall 2023, Aramark introduced Cantina Rio, POD convenience store in the Health Science Complex, and Haymaker Coffee. In Fall 2024, Bento and POD opened at North Hall, along with The Drop, a ghost kitchen and the POD at Oak. Each phase reflects Aramark’s commitment to delivering modern, student-centered dining experiences that evolve with campus needs.

Students are already embracing the new space. “The new dining hall feels open and welcoming. The views of campus and the baseball field are incredible,” said Ashtyn Waarum, a junior and Student Government Association vice president. “As a Jacksonville native, I’ve always believed food brings people together. This space reflects that spirit and gives students another place to connect and create memories.”
